Have you ever gotten home from work and been so exhausted that the last thing you want to do is cook a healthy dinner? I thought so. Me too.
It can be tempting to turn to mac and cheese, Lean Cusine, or a boring soup and salad on those exhausting days. Why not try an equally simple recipe that’s both healthy and delicious?
Here’s what you need: (makes 2 servings, 258 calories each)
- 1 c diced, cooked chicken breast (I always keep a couple of cooked chicken breasts in my refrigerator: they come in handy for a bunch of recipes)
- 4 T Newman’s Own Low-fat Sesame Ginger Dressing
- 2 T reduced fat creamy peanut butter (chunky will work too)
- 4-6 Lettuce cups (iceberg or romaine)
- Chopped Cilantro to taste
- Optional: Finely chopped red pepper, crispy asian noodles or chopped peanuts for garnish
1. Buzz the peanut butter, dressing and half of the cilantro in the food processor until mixed into a sauce
2. Toss the chicken in the sauce (the chicken can be hot or cold – your choice)
3. Fill the lettuce cups with chicken/sauce mixture
4. Top the lettuce wraps with remaining cilantro and any other garnishes you are using
Serve with ½ c cooked brown rice for a delicious 367 calorie meal.
